White Chocolate And Lemon Truffles

Chocolate truffles are a sweet very similar to chocolates. Its creator was the chocolatier Dufour de Chambéry, in France. The truffles that we all know are made with a mixture of cream and chocolate mainly. Due to their soft consistency, they can be shaped into balls.

It seems that its truffle name comes from its resemblance to natural truffles, mushrooms that are used in haute cuisine.

Truffle recipes are varied since they can be flavored in different ways. They are even coated with various ingredients. Here are three recipes for making white chocolate and lemon truffles.

1.White chocolate and lemon truffles

White chocolate and lemon truffles can be an excellent option for dessert. It is easy to prepare and very affordable.

Ingredients

  • 200 grams of white chocolate.
  • ¼ cup heavy cream.
  • 30 grams of butter.
  • 25 grams of crushed cookies.
  • 50 grams of grated white chocolate.
  • 1 teaspoon lemon zest.

Form of elaboration

Start by lining a tray with aluminum foil and reserve. In a bowl, place the chopped white chocolate. In a saucepan, heat the cream with the butter, stirring continuously so that they melt and mix the ingredients, until it starts to boil.

Continue adding over the chocolate and mix. On the other hand, crush the cookies and add them to the previous preparation. Also add the zest of the lemon peel.

When there is a homogeneous cream, let it cool down to room temperature. When it’s warm, put it in the fridge for 30 minutes.  After that time, the cream will be thicker or more solid and can be handled without problems.

With a spoon, scoop and shape the balls by hand . Next, spread the chocolate chips and pass the chocolate balls there. Repeat with all the balls and place them on a tray. When you finish making the balls, put the tray in the fridge for another half hour, and they will be ready to serve.

2. White chocolate and lemon truffles

A mix of flavors and textures in one bite. It is very easy and you only need 20 minutes.

Ingredients for 5 people

  • 250 grams of white chocolate.
  • 1 teaspoon of lemon emulsion.
  • 3 tablespoons of warm cream.
  • ½ cup of sugar.
  • 3 tablespoons of butter at room temperature.
  • ¼ teaspoon of citric acid.
  • 1 pinch of vanilla powder.

Preparation

  1. Melt the chocolate in a double boiler or in the microwave after you have chopped it up. Then beat well so that it melts completely.
  2. Add the butter and cream without stopping to stir to integrate and form a paste. Next, pour in the lemon emulsion.
  3. Let the mixture cool well, first at room temperature and then in the fridge. With a spoon, form balls and place them on waxed paper and let it rest.
  4. Make the topping: mix the citric acid, vanilla powder, and sugar. Then  sprinkle over the chocolate balls.

This recipe is another quick and simple option for making Lemon White Chocolate Truffles.

Ingredients

  • 200 grams of white chocolate.
  • 50 grams of liquid cream.
  • 30 grams of butter.
  • 1 tablespoon of lemon zest.
  • 2 sponge cakes.

We give you two options to make the mixture, one traditional and the other using the Thermomix. After preparing the mixture with the chosen option, the rest of the steps to carry out will be as in the previous recipes.

With Thermomix:

  • Put the lemon zest and the cakes in the glass , pulverize for 10 seconds and reserve.
  • Place the cream and butter at 100 ° C for two minutes.
  • Put the chopped chocolate and program 2 more minutes at speed 3.
  • Incorporate the previous mixture of sponge cakes with lemon and integrate everything for 30 seconds.

Traditional way

  • Crumble the cakes and mix with the lemon zest and reserve.
  • In a saucepan, heat the cream and before it starts to boil, place the butter and the chopped chocolate. Stir well until everything melts.
  • Put the sponge cakes with lemon.

The rest is the same for any option. Refrigerate for 1 hour, after that time, roll the preparation into balls and place on a plate. You can decorate or cover with whatever you want.
