Tiramisu Cheesecake

Ingredients for the  tiramisu cheesecake

For the base

  • 180 g digestive biscuits
  • 80 g butter, melted
  • 6-7 gingerbreads
  • Cocoa powder

For the cheese mixture

  • 100 ml water
  • 30 ml amaretto
  • 8 g soluble coffee
  • 80 g sugar
  • 8 sheets of neutral gelatin
  • 750 g mascarpone

For the whipped cream

  • 400 ml whipping cream
  • 50 g sugar

For the vaporizer

  • Water
  • 1 teaspoon soluble coffee
  • 2 teaspoons of sugar

Procedure to make the  tiramisu cheesecake

  • First, put the gelatin sheets in cold water and leave to hydrate for about 5 minutes.
  • In a saucepan, add the water, the amaretto, the soluble coffee and the sugar. Stir and bring to a boil to reduce the alcohol in the amaretto.
  • When it starts to boil, drain the gelatin sheets and incorporate them, stirring for 1 minute or until the gelatin is completely dissolved.
  • Reserve and let it cool.
  • Prepare the coffee and add sugar to taste. Pour into a vaporizer.
  • Crush the cookies. Add the softened butter and mix well. Line a mold with parchment or greased paper and cover with the biscuit and butter mixture.
  • Next, add the mascarpone cheese to the blender. Beat with the gelatin mixture. Mix well until the ingredients are integrated.
  • Whip the cream. Beat with the mixer until it begins to thicken. Add the sugar and beat without making it rise all the way. Incorporate the cream to the rest of the ingredients with the help of a spatula and making enveloping movements.
  • Fill the mold with the cheese and cream mixture approximately halfway. Smooth.
  • Steam the gingerbreads with the coffee and cover the entire surface of the cheese with them. If necessary, trim them until they cover the entire surface.
  • Cover with the rest of the mixture and smooth with a spatula. Put in the fridge for a minimum of 6 hours.
  • Finally, unmold it and decorate it with cocoa powder.

  • First, 800 g Philadelphia cheese
  • 4 eggs
  • 180 g sugar
  • 1 pinch of vanilla
  • Tiramisu scent
  • 1 package of Savoyard sponge cakes
  • 200 ml coffee
  • 50 ml hazelnut liqueur
  • 1 teaspoon of coffee paste
  • 1 teaspoon of cocoa
  • 250 g mascarpone
  • 250 ml whipping cream
  • Finally, 65 g icing sugar

Procedure to make the  tiramisu cheesecake

  • First, preheat the oven to 200ºC.
  • Next, mix the coffee with the cocoa, the coffee paste and the hazelnut liqueur.
  • Place all the cakes so that they cover the base of the mold and bathe them with the coffee mixture. Put them in the fridge while you prepare the cream.
  • Beat the eggs with the Philadelphia cheese, the sugar, the vanilla and 4-5 drops of tiramisu aroma with a few rods. When the mixture is homogeneous, pour over the cookies.
  • Prepare a tray for the bain-marie and place the mold inside. Fill the tray with water until it covers two fingers of the mold, cover with aluminum foil and bake for approximately one hour at 180ºC.
  • Remove the cake when the center is still creamy, it will be finished when it is removed from the oven and thus cracks are avoided.
  • Let the cake rest for about 3 hours.
  • When it is completely cold, prepare the coverage. To do this, beat the cream with the sugar and the mascarpone so that it is integrated but not assembled.
  • Finally, put the icing in a pastry bag with the smooth nozzle and cover the cake with it. Sprinkle with cocoa and serve.
