Ingredients

  • 1 cup of rice flour (150 g).
  • 1 pinch of baking powder.
  • 2 tablespoons of brown sugar (30 g).
  • 1 tablespoon of olive oil (15 ml).
  • 1 egg.
  • 6 strawberries
  • 1 pear
  • 6 raspberries.
  • 6 blackberries.
  • 2 tablespoons of Modena vinegar (30 ml).
  • ¼ cup of water (62 ml).
  • 2 scoops of mandarin ice cream.

Preparation of rice cakes with macerated fruits

  1. Start by mixing the flour with the baking powder in a medium bowl.
  2. Next, in another bowl put the eggs, sugar, vanilla and oil and mix everything very well.
  3. As soon as you notice that the ingredients have been well integrated, add the flour with the baking powder and stir until you get a homogeneous dough.
  4. Have a heat-resistant mold on hand and pour the mixture into it.
  5. Set the oven temperature at 170ºC and insert the mold.
  6. Bake in 15-20 minute intervals.
  7. Now it is the turn to prepare the caramel that will go on top of the rice cakes.
  8. Put a frying pan over medium heat and add the following ingredients: balsamic vinegar, water and brown sugar.
  9. Then, chop all the fruits, no more than 7 centimeters per piece.
  10. Next, pour the caramel on top of the fruit pieces and let it rest.
  11. To finish, cut and serve the cake into squares. Place the fruits marinated with the caramel on top and then add a scoop of mandarin ice cream.
