Mushroom Quesadillas

Quesadillas are possibly one of the most emblematic dishes of Mexican gastronomy. Its basic ingredients are: corn cakes and melting cheese, because the filling could be whatever you want.

In this article, we share with you much more than delicious mushroom quesadillas and three different sauces to accompany them.

Mushroom quesadillas recipe

Ingredients

Ingredients for the corn pancakes:

  • 300 g of corn flour
  • 1/2 liter of water
  • 6 tablespoons of olive oil for the dough
  • 2 teaspoons of salt
  • A drizzle of olive oil or a little butter to cook them

Ingredients for the mushroom quesadillas:

  • Corn tortillas
  • 200 g cheese in strips to melt (can be mozzarella )
  • 200 g of mushrooms
  • 1 medium onion
  • 1 or 2 cloves of garlic
  • Extra virgin olive oil
  • 1 handful of epazote
  • cumin (optional)
  • Pepper
  • Salt

Utensils

  • 1 bowl
  • 1 roll
  • film paper

  • 1 comal (optional)

Preparation of the corn cakes:

  • Put the flour, water and salt in a bowl.
  • Stir well.
  • Add the olive oil.
  • When you have all the ingredients integrated, you will begin to work the dough on a table.
  • To prepare the Mexican pancakes, take pieces of the dough the size of an egg. After  placing them between two pieces of plastic wrapknead with the rolling pin.
  • Pass them through a pan with a little olive oil or butter until golden brown.
  • Accompany your quesadillas with your favorite sauce.

Preparation of the mushroom quesadillas:

  • Wash the mushrooms.
  • Chop the mushrooms, onion, and garlic.
  • Sauté the onion and mushrooms seasoned with the salt, pepper and epazote.
  • Heat the pancakes, you can do it on a comal in a pan.
  • Add the cheese and the filling to each pancake.
  • Fold the quesadillas and put them back on the comal or in the skillet, until the cheese is melted.

Sauces to accompany the mushroom quesadillas

Ingredients

Sauces for quesadillas there are hundreds. We present you here only 3. Of course, all delicious: one with olive oil, another with yogurt and the third with milk and cream.

Chili oil with lemon:

  • 1 glass of olive oil (200 ml)
  • 2 chili peppers
  • 1 dash of lemon juice
  • Salt

Creamy Herb Dressing:

  • 1 glass of olive oil
  • 6 tablespoons unsweetened plain yogurt
  • Some fresh basil leaves
  • 1 branch of parsley
  • juice of one lemon
  • Pepper
  • Salt

Chipotle coriander dressing:

  • 60 ml milk
  • 125 ml of liquid cream
  • a handful of fresh coriander
  • Pepper
  • Salt

Preparation of the sauces:

Sauces are very easy to prepare. You just have to cut all the solid ingredients finely and mix them with the liquids.

  • Difficulty level: easy
  • Preparation time: approximately 30 minutes.
  • Epazote is a typical Mexican spice,  essential if you want to make authentic Mexican food. You can find it in any spice store. It also helps fight intestinal parasites.
  • A comal is a clay disk where food is heated, grains are roasted, or chili peppers are roasted. Today they are sold in iron and are used to heat Mexican tortillas.
  • If you want your quesadillas not to be so dry and tasteless, accompany them with various sauces so that each diner chooses the one they like the most.
  • In addition to the sauce,  accompany the quesadilla with lettuce, grated cheese and some radishes.

Other ideas for preparing mushroom quesadillas
