  1. Preheat oven to 200 ° C.
  2. In a large skillet, heat the oil over medium heat. When it is very hot, add the red pepper and onion. Cook for about 20 minutes or until the vegetables are golden brown.
  3. Add the garlic to the pan and stir for a few minutes. Then add the sweet paprika, cumin and cayenne pepper. Stir for one or two more minutes.

  • 4 eggs

  • Salt to taste).
  • 2 small cans of anchovies in olive oil (80 g).
  • 5 cloves of garlic
  • 1 green chilli.
  • Parsley (to taste).
  • 1 onion chopped in julienne.
  • Fresh ginger

Preparation

  1. For the sauce, wash the ingredients very well and place the tomatoes, two garlic cloves, the parsley and the coriander in a blender.
  2. In a frying pan, add the oil that the anchovies bring. When it is hot, add another drizzle of oil and add the rest of the garlic.
  3. Add the onion, green chilli, ginger, green pepper, a pinch of salt and black pepper to the sauce.
  4. Sauté for five minutes. Then cover and cook another 30 minutes over low heat.
  5. After the indicated time, uncover the sauce and add the chopped anchovies. Cover again for a few minutes, add the chopped parsley and that’s it.
  6. For the eggs, in a pot add enough water, a pinch of salt and a dash of vinegar.
  7. When the water starts to boil, add the eggs and cook for about five minutes.
  8. Once the five minutes have passed, remove the eggs and serve with the sauce.
