  • 1 pinch of salt.
  • 1 pinch of pepper
  • 4 egg whites (200 g).
  • 1 large bunch of spinach.

Preparation

  • Wash the spinach well and separate the leaves from the stem.
  • Cut the leaves into small pieces.
  • With a processor or blender, mix all the ingredients until you get a light paste.
  • In a hot pan, previously greased with oil, pour a ladle of the spinach mixture until it forms a kind of cake.
  • Cook well, on one side, then flip to cook on the other side.
  • Once cooked, they are spread out on a plate and filled with sauteed vegetables or shredded chicken.
  • To wrap, the bottom end of the tortilla is folded towards the center and then each side up.
  • You can make as many spinach wraps as you want or need (depending on the number of diners).

  • 1 boiled egg.
  • ½ avocado (50 g).
  • ½ carrot (10 g).
  • 1 small pumpkin (150 g).
  • ½ salad tomato (20 g).
  • 2 large spinach leaves.
  • Salt, pepper and olive oil to dress (to taste).

Preparation

  • Wash the spinach leaves well and allow to dry. Cut the pumpkin and carrots into small strips.
  • Sauté in a pan with a little salt, pepper and olive oil.
  • Spread the spinach leaves on a plate or tray. In the center of the sheet, place the pumpkin and carrot strips.
  • Add the egg, the avocado and the tomato pieces, cut into small cubes.
  • Season with salt, pepper and olive oil. It can also be substituted with a commercial dressing, preferably organic.
  • Fold the lower end of the leaf up and wrap the filling with it, until forming a wraps. It must be tightened well to prevent the content from coming out.
  • Form as much spinach wraps as needed, serve and enjoy.

 Ingredients for tortillas 

  • ½ cup of milk (150 mL).
  • 2 large bunches of spinach.
  • 2 tablespoons of beaten egg or cream to make pancakes (100g).

     Ingredients for the stuffing

    • ½ carrot (10 g).
    • 1 piece of cucumber (10g).
    • 150 g of cooked chicken breast.

    Preparation

    • After washing the spinach leaves well, cook them for about five minutes in boiling salted water.
    • Strain, let cool and blend together with the milk and protein until you get a thick paste.
    • In a hot pan, drizzle with oil and pour a ladle with the prepared mixture to cook the tortillas.
    • Cook on both sides, until an attractive golden hue is achieved.
    • For the filling, cut the cucumber, carrot and chicken into strips. Place in the center of the tortillas and roll into a small compact lump.
    • Once you have mastered the technique you can make as many spinach wraps as you want.

    Ingredients

    • ½ avocado (50 g).
    • 150 g of natural tuna.
    • 1 piece of cucumber (10 g).
    • 2 large spinach leaves.
    • The dressing of your choice (salt and oil, or a vinaigrette).

    Preparation

    • Wash the spinach leaves well, let them dry and spread each one separately.
    • At one end of the sheet, place half of the tuna.
    • Add avocado and cucumber cut into small pieces.
    • Season to taste.
    • Roll the sheet like a sushi roll by pressing hard, to prevent it from opening.
    • Cut into wheels and repeat the procedure with the other sheet.
