Baba

The baba is a delicious Spanish traditional recipe, which is soaked in syrup, which in turn has been mixed with a few drops of liquor, such as the sweet wine, sherry or rum, among others. In some regions of Spain cinnamon is added on top, sugar, icing sugar or a layer of chocolate.

In any case, the regional version of the borracho cake that you choose will be a real delight, ideal for breakfasts and snacks, since its texture is “wet”, unlike the traditional sponge cake, which tends to be drier.

We will need….

For the mass

  • 150g sugar
  • 4 eggs
  • 200 g of flour

To decorate (options):

  • Chocolate to melt or cover
  • Butter softened at room temperature
  • Zest of an orange
  • Lemon zest
  • Cherries
  • Mint
  • Ground cinnamon

For the syrup:

  • ½ glass of sweet wine
  • 100 ml of water
  • 200g sugar

Utensils

  • Oven
  • Whisk rods
  • Large bowl
  • Baking tin
  • A saucepan
  • A serrated knife
  • Large plate or tray

Baba preparation

Biscuit:

  • We preheat the oven to 180 ºC.
  • First we will beat the eggs in a large bowl with some hand rods.
  • Little by little and without stopping beating, we will add the sugar.
  • Once the eggs and sugar have been beaten, we will also add the flour little by little and without stopping beating. We whisk the mixture vigorously until homogenized.
  • Grease  a square or rectangular mold, either glass or aluminum, with oil and flour and mix well.
  • We will pour the dough into the greased mold.
  • We put in the oven and for 40 minutes, we bake the cake at 180 ºC.
  • We will remove from the oven and let the bacon cool to room temperature in its mold.

Syrup:

  • While the cake is baking we will  prepare the syrup.
  • Pour the water and sugar into a saucepan and put them over medium heat.
  • We stir everything for a few minutes until it warms up, begins to boil and we leave it boiling for a few more minutes.
  • We remove the saucepan from the heat and add the wine.

Mounting:

  • We unmold the cake.
  • We will cut the upper part with the help of a large serrated knife. We will remove the natural mound from the cake.
  • The rest, we will cut it into equal squares.
  • We place the pieces in a deep plate or tray and pour the syrup on top of them. We let it rest for about 10 minutes.
  • Finally we will transfer them to a large plate or tray.

Decoration options:

  • Sprinkle ground cinnamon and / or sugar on top.
  • Garnish with some sweet cherries  and even some mint leaves.
  • Melt dark chocolate with a little butter in a double boiler or in the microwave, stirring every minute. Dip each piece in the chocolate until it is one finger high (only one base has to be wet). Then, place them on a plate and let them cool until the chocolate hardens, as if it belonged to the body of each piece of baba.

  • If you like its citrus touch, you can also add the zest of an orange or a lemon to the dough.
  • Also, remember that you can substitute sweet wine for sherry, rum or the liquor of your choice (orange liqueur, Italian lemongrass, hazelnut liqueur, brandy, etc.).

Data of interest

In this recipe we have given you the most common version to make the bacon, but you can apply your personal touch. The borracho cake is usually small, although you can make delicious bites in individual portions to make the way of serving them more comfortable.
