1. Summer pudding

This dessert is very simple and will seduce whoever sees it, thanks to its content of red fruits bathed in syrup. This colorful and juicy sweet is one of the classics of English gastronomy and we cannot stop trying it.

We can choose the red fruits to our liking, depending on the season, or we can freeze them and have them available throughout the year. With them we will fill this pudding that opens as a surprise gift revealing its content in attractive red and dark colors. 

Ingredients

  • 900 g of red fruits to taste: strawberries, blackberries, currants, raspberries, blueberries
  • ¾ cup of sugar (150 g)
  • 7 slices of white bread (better if a little stale)
  • 1 teaspoon of vanilla essence (4 ml)
  • 3 tablespoons of water (30 ml)

Elaboration

  • First, wash the red berries and let them drain.
  • Next, in a large frying pan put 3 tablespoons of water with the sugar and heat until the two ingredients are dissolved. Boil for 1 minute and add the vanilla and fruits.
  • Then cook for 3 minutes over low heat, mixing gently. We will see how the fruits soften while releasing the juice.
  • Let cool, drain the fruit and put the juice in a bowl.
  • On the other hand, prepare the pudding mold and put a plastic on it.
  • Next, we will remove the edge from the bread slices and we will soak them in the juice and put them in the mold, pressing well towards the mold so that there are no spaces.
  • Then add the softened fruits in the middle and cover with the rest of the slices. On the other hand, save the juice that has been left over. 
  • Finally, cover with the plastic and a lid and leave in the fridge overnight.
  • The remaining juice can be boiled for an additional 10 minutes to reduce and turn into a delicious syrup.
  • To finish, the next day we will serve a portion of the pudding, we will add the syrup and, if we wish, we will accompany it with ice cream or cream. 

2. Custard

Custard

A typical English cream is known by the name of custard that may remind us of custard. It is light and not very sweet, and can be consumed alone as a dessert or to fill or accompany other desserts such as cakes, biscuits, etc.

We invite you to try this recipe and let yourself be seduced by its smoothness and delicate vanilla flavor. Few ingredients are needed, and with a few gastronomic tips and secrets, the result will be perfect.

Ingredients

  • 2 ½ cups of milk (675 ml)
  • 4 egg yolks
  • ¼ cup of sugar (50 g)
  • 1 tablespoon of vanilla extract (10 ml)
  • 2 tablespoons of cornstarch (30 g)

Elaboration

  • To start, heat the milk with the vanilla over low heat until it is about to boil.
  • On the other hand, mix the egg yolks, sugar and cornstarch in a bowl until you get a light-colored cream that is quite whipped. Add a little of the milk to the mix and beat again.
  • Then add this preparation to the casserole and mix well with the milk until it thickens like a cream.
  • Next, pass the cream through a cloth strainer and store it in a container with plastic wrap to let it cool. The plastic must be almost glued to the cream if we want to avoid a hardened layer on top.
  • We already have the cream ready to consume or to accompany other desserts.
